Recipe: Fluffy Pancake Platter and Fruit Smoothies
Ingredients:
For the Pancakes:
2 cups all-purpose flour
2 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups buttermilk
2 large eggs
1/4 cup melted butter
1 tsp vanilla extract
Cooking spray or extra butter for greasing
Optional toppings: whipped cream, chocolate chips, blueberries, strawberries, maple syrup

1 cup frozen berries (strawberries, blueberries, or raspberries)
1 banana
1 cup Greek yogurt
1 cup orange juice
1 tbsp honey (optional)
Steps:
Pancakes:
Prep Work:
Preheat a non-stick griddle or frying pan over medium heat.
Let the kids measure out the dry ingredients into a mixing bowl.
Mix the Dry Ingredients:
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Combine Wet Ingredients:
In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
