September Sizzlin' Skewers
A delicious but also easy recipe that even the busiest dad can whip them up in no time!

The crisp September air has rolled in and hereβs a simple recipe that is perfect for a weekend dinner, lunch, or even as a hearty snack. They're not only delicious but also so easy that even the busiest dad can whip them up in no time!
Ingredients:
Makes roughly two skewers
1 lb boneless chicken breast, cut into 1-inch cubes
1 bell pepper (any color), cut into chunks
1 zucchini, sliced
1 red onion, cut into chunks
1 cup cherry tomatoes
Olive oil
Salt, to taste
Pepper, to taste
2 tsp smoked paprika
1 tsp garlic powder
Wooden or metal skewers
Marinade (Optional for extra flavour):
1/4 cup olive oil
2 tbsp lemon juice
2 garlic cloves, minced
1 tsp dried oregano
Salt and pepper, to taste
Instructions:
1. Marinate the Chicken (optional): In a bowl, whisk together all the marinade ingredients. Toss in chicken cubes, ensuring they're well coated. Let it sit for at least 30 minutes (or overnight for a deeper flavour).
2. Preheat the Grill: Fire up that grill to medium-high heat!
3. Skewer Assembly: Thread chicken, bell pepper, zucchini, red onion, and cherry tomatoes onto skewers. Drizzle with olive oil and sprinkle with salt, pepper, smoked paprika, and garlic powder. Give them a good rub to ensure even seasoning.
4. Grill Time: Place the skewers on the grill. Cook for 5-7 minutes on each side or until the chicken is cooked through and has those sizzlin' grill marks.
5. Serve: Once done, remove from the grill and let them rest for a couple of minutes. Serve with a side of garlic bread or a fresh garden salad. And, of course, dad's special BBQ sauce, if you have any!
